01 -
In a small bowl, thoroughly combine olive oil, harissa powder, smoked paprika, ground cumin, cayenne pepper, and lemon juice to form a thick and aromatic paste.
02 -
Rub the harissa marinade evenly over the chicken thighs, ensuring all surfaces are well covered. Alternatively, combine chicken and marinade in a bowl or sealable bag and turn until fully coated.
03 -
Allow the chicken to marinate in the refrigerator for at least 1 hour to develop maximum flavor. For best results, marinate for up to 4 hours or overnight.
04 -
Preheat the oven to 220°C (425°F). Line a baking tray or rimmed baking sheet with parchment paper or aluminum foil.
05 -
Place the marinated chicken thighs in a single layer on the prepared baking tray. Bake in the centre of the preheated oven for 18 to 20 minutes or until the internal temperature reaches at least 74°C.
06 -
Remove the chicken from the oven and let it rest for 5 minutes before slicing to allow the juices to redistribute.
