In a medium bowl, mash the ripe bananas with a fork until mostly smooth.

Add brown sugar, vanilla extract, cinnamon, nutmeg, and a pinch of salt to the mashed bananas. Sift the all-purpose flour over the mixture and stir thoroughly with a spoon until a smooth batter forms.

Pour enough vegetable oil into a 10 inch skillet to cover the bottom and heat over medium-high heat until the oil shimmers.

Drop heaping spoonfuls of batter into the hot oil. Cook until bubbles appear on the surface and edges are golden brown, about 2 minutes per side. Flip and continue cooking until the other side is browned.

Transfer the cooked fritters onto paper towels to drain excess oil. Serve warm, optionally dusted with powdered sugar or drizzled with honey.
