Thoroughly wash and gently dry the strawberries. Slice each strawberry in half lengthwise, keeping stems intact if desired.

Use a small knife to score a shallow triangle into the cut side of each strawberry half. With a melon baller or small spoon, carefully remove a portion of the center to create space for the filling.

Arrange the hollowed strawberries cut side down on absorbent paper towels and allow to drain for at least 2 minutes.

Place the prepared strawberry halves onto a serving platter, spacing them evenly.

In a medium mixing bowl, combine whipped cream cheese, powdered sugar, lemon zest, and vanilla extract. Stir or whip until a smooth, airy consistency is achieved.

Fill a piping bag fitted with a large tip, or a resealable plastic bag with one corner trimmed, with the prepared cream cheese mixture.

Pipe the cream cheese mixture neatly into the center cavity of each strawberry half.

Sprinkle each filled strawberry with graham cracker crumbs and assorted sprinkles. Serve immediately for optimal freshness.
